Christmas is fast approaching! And nothing says Christmas like gingerbread! Enjoy one of Christmas’ favorite flavors in these Gingerbread Cheesecake Roll Ups.  They are easy to make and assemble yet look fancy on the serving platter.

The gingerbread cookie portion is made with a pizzelle baker. I received one of these when I was first married over 30 years ago and it is still going strong. Mine is a Rival 3 in 1 that makes Belgian waffles as well as grilled sandwiches. Unfortunately I don’t think they make the combo version anymore though.

To add the filling you can use a pastry bag or an electric cookie press. I inherited my electric cookie press from my mom. She owned one but was never much of a baker. So when I got married she gave it to me. After she passed away, I found this cookie press at her house so it now belongs to me as well. I mostly use my cookie press for making spritz cookies at Christmas and for filling things like deviled eggs and desserts.
