Pasta With Chicken And Dairy Free Roasted Red Pepper Sauce

Italian seasoned chicken served over pasta with a dairy free roasted red pepper sauce makes a wonderful special occasion meal. The chicken is seasoned with Morton Italian Roasted Garlic Sea Salt Rub. To create the dairy free sauce use unsweetened almond milk (or dairy free milk of choice) along with chicken stock. Add vegan Parmesan cheese using this recipe from Jane’s Healthy Kitchen or try nutritional yeast which according to Dr. Axe is a great superfood.

Ingredients
  1. 2 boneless chicken breasts
  2. Italian seasoning rub
  3. olive oil
  4. pasta of choice
For the Sauce
  1. 2 red peppers
  2. 4 teaspoons minced garlic
  3. 1/4 cup chopped onion
  4. 1/2 cup unsweetened almond milk
  5. 3/4 cup chicken stock
  6. 2 Tablespoons vegan Parmesan cheese or nutritional yeast
  7. 1 Tablespoon cornstarch or other thickener
  8. salt and pepper to taste
Instructions
  1. Heat broiler to 500 degrees. Cut peppers into 4-5 slices each and place on foil lined sheet, skin side up. Place pan several inches under broiler and cook for 10-15 minutes or until skin is blackened. Remove from pan and place in a bowl. Cover with plastic wrap and let sit for 30 minutes.
  2. While peppers are roasting, cut chicken breast into 1 inch pieces. Season with Italian rub. Heat a couple tablespoons of oil in a frying pan. Add the chicken and cook until lightly browned and cooked through (about 5 minutes). Remove the chicken to a plate.
  3. Add another tablespoon of oil (if needed) and cook onion and garlic for about 5 minutes or until soft and light brown.
  4. After peppers have set for 30 minutes, remove the skins. They should peel off easily at this point.
  5. Heat water and begin cooking pasta.
  6. Add peppers, onion and garlic mixture, almond milk, chicken stock, cheese or yeast, cornstarch, salt and pepper to a blender. Blend until smooth. Pour mixture into frying pan and cook over medium heat until it begins to thicken. Let simmer for a few minutes.
  7. Serve chicken and red pepper sauce over pasta.
Notes
  1. Sprinkle with red pepper flakes to add a little spice!
