Gluten Free Soft Ginger Snaps

These Gluten Free Soft Ginger Snaps adapted from the Recipe Treasures website.  In addition to being gluten free these cookies are also paleo friendly. They do not contain any grains, dairy or refined sugar. They make a great fall lunch box treat for anyone with food sensitivities.

Gluten Free Soft Ginger Snaps

Gluten Free Soft Ginger Snaps

Recipe for soft and chewy ginger snaps that are gluten free and free of refined sugar!
  • ¾ cup coconut oil
  • ¾ cup honey
  • 1 egg
  • ½ cup molasses
  • pinch of salt
  • ½ teaspoon cloves
  • ¾ teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ginger
  • 2 cups almond flour*
  • ½-¾ cups coconut flour*
  • 1 teaspoon xantham gum
Instructions
  1. Preheat oven to 350°.
  2. In a large bowl, beat coconut oil with a mixer. If your coconut oil is not soft make sure to soften it (not melted) before you use it.
  3. Beat in egg, mixing well.
  4. Add molasses and honey and beat until well incorporated.
  5. Add salt, cloves, cinnamon, soda, ginger, and mix until nice and blended. Next add the almond flour, coconut flour and xantham gum. Add enough coconut flour so that mixture holds together on a spoon and is not too runny.
  6. Drop by heaping teaspoons on baking pan.  I like to line my pan with parchment paper for easy clean up.
  7. Bake at 350 degrees for 12-14 minutes. Let cool on the pan.

These are very soft so it’s best to let them cool before trying to pick them up. 

*If you are not concerned about grains you can use 1 cup almond flour and 1 ½ cups gluten free flour blend.

  2. I had what I called a gall boulder. My insurance at the time would not cover surgery so I had to find an alternative to controlling the attacks. I read gluten contributed to gall bladder attacks so I went gluten free – and it worked!! When I got the thing taken out, I started eating gluten, but much of my baking still is gluten free. It tastes better! I love ginger snaps so this is a recipe I’m going to need to try!!

  11. Roseann, these cookies look and sound wonderful! I’m not gluten- or grain-sensitive myself, but I have several friends who are. And I enjoy coming up with GF treats for them. Love almond and coconut flours! I use organic unsalted butter, coconut oil and extra virgin olive oil a lot. And I use molasses and honey as well as refined sugar. I lump them altogether in my self-imposed sugar limit of no more than 24 grams in a day. This cookie will make a wonderful treat for my multi-sensitivity friends who will be visiting!
