Healthy Garlic Chicken

Healthy Garlic Chicken is made with onions, bell peppers and garlic which all provide antioxidants needed by your body. This chicken makes a great addition to a healthy meal plan! And it only takes about 30 minutes to prepare and cook. That makes it a perfect meal for a weeknight! Enjoy!

Ingredients
  1. 4 thin sliced boneless chicken breasts
  2. 1 Tablespoon minced garlic
  3. 1 Tablespoon cooking oil
  4. 2 bell peppers
  5. 1/2 large onion
  6. 1/2 cup chicken stock or broth
  7. salt and pepper to taste
Instructions
  1. Salt and pepper chicken to your liking.
  2. Slice the onion as well as the bell peppers.
  3. Heat the oil in a frying pan. Then add garlic and cook for just a minute (you don't want to burn it). Place the chicken breasts on top of garlic in frying pan.Cook on each side for about 3 minutes or until nicely browned.
  4. Remove chicken from pan.
  5. Then add onions and bell pepper. Cook onions until they begin to carmelize and bell peppers until they are softened.
  6. Pour 1/2 cup chicken stock into pan to loosen all the brown bits that have accumulated in the frying pan.
  7. Place chicken back in the frying pan and heat for a few minutes.
Notes
  1. This is great served with avocado over riced cauliflower.
