Cilantro Lime Chicken Salad and Dressing
Cilantro Lime Chicken
Cilantro Lime Chicken makes a great summertime meal served over salad. After the meat marinates it only takes about 10 minutes of cook time so it doesn’t heat up the kitchen. You could also grill the chicken outside or use a cuisinart griddler. I use dried cilantro in my recipe because it is too hot in my area to grow this herb right now! Thanks for stopping by! The dressing makes about 1 1/2 cups. There was definitely dressing left over! I got 3 servings from the chicken but you could easily get 4 depending on your ratio of chicken to salad. Hope that helps!

So kind of random but do you grow your own cilantro? I can never get mine to stop flowering.
I sometimes grow it in the cooler seasons. It’s too hot in Texas to grow it during the summer months. Although I bought an Aerogarden not too long ago so I’m going to try growing it in there.
This sounds like a fabulous addition to our meal plan and I think I may already have everything on hand to make it! That’s a win!

This recipe is on for Friday night! Roseann, I have gone back to exercise and proper diet for 1 and 1/2 weeks now. Slow and steady. Feels delightful already! BTW – I always have pain and fatigue when the barometric pressure is very high. Do you have the same experience? I still try to move and groove for 1/2 the day – sometimes more.
Yes – weather certainly impacts my aches and pains! Glad to hear you are back to exercise! I did yoga last summer and it helped a lot!
